Azienda Colatura Anchovy Liquid

Colatura, that wonderful briny liquid, comes from the Amalfi Coast region of Campagnia, Italy. Used since the Roman times, Colatura was until recently not available in the USA. Colatura is extracted from curing anchovies, and takes over five months to make.

Colatura is served drizzled over pasta, or combined with chili flakes over breadcrumbs, or as a rare and special table condiment.
