It is handmade in small batches using the Orleans method of slow evaporation and aged in oak barrels for over two years. O Sherry Vinegar is a timeless classic with a California twist. It begins with Palomino grapes aged outdoors on sun-drenched mats. The Solera method is used, which involves barrel rotation and slow aging. O ages the sherry wine in toasted white oak barrels and uses a 60 year old family starter to impart rich, deep caramel and nut flavors. After two years of aging, O Olive Oil introduces California apricot wine to blend nuances of fresh fruit with the classical qualities of fine sherry vinegar.
