Cacao Nibs (Scharffen Berger)

By using a blend with a large number of bean varieties and appellations, Scharffen Berger produces chocolate with dense, complex fruitiness and a long, softly acidic finish. Above all, its taste is of cocoa beans and the places they grow. Cacao Nibs are roasted cocoa beans, separated from their husks and broken into small bits. Like their chocolate, the taste of Scharffen Berger Cacao Nibs reflects careful selection of ripened, well fermented cocoa beans from tropical regions in Venezuela, the Caribbean, and Africa. They work best when used to accent other foods, as a substitute for nuts or chocolate chips, sprinkled on ice cream, or added to cookies. Some chocolate lovers have been known to snack on nibs alone.
