30-Year Balsamic Vinegar of Modena (Acetaia Leonardi)

Founded in 1871 in Magreta di Formigine, a few miles north of the town of Modena, the Acetaia Leonardi is run by Giovanni Leonardi and his son, Francesco. Their skill and dedication to respecting tradition results in products that are consistently rated outstanding within the Consortium. The Consortium, which consists of 200 producers, began in 1967. Only a limited quantity per producer, per year, is approved. Nowadays, some of Modena's best producers choose to bottle and sell their remaining product as "condimento". This allows the producers more creative freedom to package and market a wider variety of products. This fine vinegar is of the condimento variety.
