Grated, dried fish roe. A traditional product, dried and salted in a method similar to that used in making prosciutto.

Sprinkle over Tuscan white beans or pasta tossed with olive oil or butter, or use as an extravagant canape of eggs scrambled with bottarga and butter served on crostini and topped with more grated bottarga. It can also be used as a seasoning or condiment.

Choose from Bottarga di Tonno (tuna roe) and Bottarga di Muggine (mullet roe).
